A refreshing and healthy dessert made with nuts, kiwi, and ginger. Perfect for a light treat!
Preparation Time: 15 minutes (plus chilling time)
Serving Size: 8 servings
Ingredients:
- 200 g nuts (such as walnuts or almonds)
- 10 dates
- 100 ml coconut oil (melted)
- 200 g cottage cheese or plant-based alternative
- 2 ripe kiwis
- 1 tbsp fresh ginger (grated)
- 1 tbsp honey or agave syrup
- 1 tsp vanilla extract
- A pinch of salt
- Coconut flakes for garnish (optional)
Instructions:
1. Soak the nuts in water for about 2 hours and rinse them well.
2. In a food processor, blend the soaked nuts and dates into a smooth mixture.
3. Press the mixture firmly into the bottom of a springform pan (about 20 cm in diameter).
4. For the filling, blend the cottage cheese, kiwis, grated ginger, honey, vanilla extract, and salt in a food processor until smooth and creamy.
5. Pour the filling over the nut base and smooth the top.
6. Allow the cake to chill in the refrigerator for at least 4 hours or overnight.
7. If desired, garnish with coconut flakes before serving.
8. Cut into slices and enjoy the refreshing flavor!
