Ingredients:
- 400 g spaghetti
- 150 g bacon or guanciale
- 3 egg yolks
- 100 g Parmesan cheese (grated)
- 2 garlic cloves (minced)
- Salt
- Black pepper
- Fresh parsley (for garnish)
Instructions:
1. Cook the spaghetti in salted water according to package instructions until al dente.
2. Meanwhile, heat a frying pan and cook the bacon or guanciale until crispy. Add the minced garlic and sauté for an additional minute.
3. In a bowl, mix the egg yolks and grated Parmesan cheese. Season with salt and black pepper.
4. Once the spaghetti is cooked, drain it and reserve a little pasta water. Add the spaghetti to the pan with the bacon.
5. Remove the pan from heat and stir in the egg mixture with the spaghetti. If needed, add reserved pasta water until the sauce is creamy.
6. Serve immediately, garnished with fresh parsley and extra Parmesan cheese on top.
