Traditional Tilliliha

A delicious Finnish dish that is slowly simmered to ensure tender and flavorful meat. Preparation time is approximately 4 hours, but it can be made the day before. Serving size: 4-6 people.Ingredients:
- 1.2 kg beef brisket, chuck, or shank
- Water
- 2 carrots
- 1/4 celeriac
- 1 parsnip
- 1 leek
- 1 onion
- 1/4 tsp whole black peppercorns
- 1/4 tsp whole white peppercorns
- 1/2 tsp whole allspice
- Salt
For the Sauce:
- 3 tbsp butter
- 3 tbsp all-purpose flour
- 500 ml beef broth
- 1 tbsp lemon juice
- 1 tbsp vinegar
- 1 tsp sugar
- 50 ml chopped fresh dill
- Salt
Instructions:
1. Rinse the piece of meat under cold water and place it in a pot. Cover the meat with cold water. Bring to a boil and skim off any foam that forms on the surface.
2. Peel and chop the vegetables into large pieces. Add them along with the spices to the pot and simmer gently for about 3 hours, or until the meat is tender.
3. Remove the meat from the pot and let it cool. Trim away any sinew, gristle, and fat. Strain the broth and set it aside.
4. In a saucepan, melt the butter and add the flour. Cook the flour over low heat, stirring constantly for about 5 minutes.
5. Gradually add the beef broth, about a deciliter at a time, allowing the sauce to come to a boil after each addition. Simmer the sauce over low heat for about 10 minutes.
6. Stir in the lemon juice, vinegar, and sugar. Season with dill and salt. Add the pieces of meat to the sauce and heat until warmed through.
7. Serve with boiled potatoes. You may also serve with pickled cucumbers, pickled beets, or green salads.
