Ingredients:
- 400 g salmon fillet
- 1 liter fish stock
- 200 ml heavy cream
- 2 potatoes
- 1 onion
- 2 dl fresh dill
- 1 tablespoon butter
- Salt to taste
- Black pepper to taste
- Lemon juice
Instructions:
1. Peel and dice the potatoes into small cubes. Finely chop the onion.
2. Heat the butter in a pot and add the onion. Sauté the onion until it becomes soft.
3. Add the potato cubes to the pot and pour in the fish stock. Cook for about 10 minutes until the potatoes are tender.
4. Cut the salmon fillet into bite-sized pieces and add it to the pot. Cook for an additional 5-7 minutes until the salmon is cooked through.
5. Pour in the heavy cream and mix well. Season with salt, black pepper, and lemon juice.
6. Chop the fresh dill and add it to the soup just before serving. Stir gently.
7. Serve hot and enjoy!
