A delicious and exotic dish that combines fresh ingredients with the richness of coconut. Perfect for a light lunch or as a side dish.

Ingredients

- 150 g fresh mushrooms
- 1 small onion
- 100 g pineapple
- 1 dl coconut cream or coconut milk
- 1.5 dl cooking cream
- Salt and pepper to taste
- Oil for frying

Instructions

1. Chop the onion and mushrooms into small pieces.
2. Heat oil in a pan and add the onion. Sauté the onion until it is soft.
3. Add the mushrooms to the pan and fry until they are nicely browned.
4. Add the chopped pineapple to the pan and mix well.
5. Pour the coconut cream and cooking cream over the mixture. Stir and let simmer on low heat for about 5-10 minutes.
6. Season with salt and pepper to taste.
7. Serve warm, for example with rice or salad.
