- 200 g rice noodles
- 1 cucumber
- 1 red bell pepper
- 1 carrot
- 1 avocado
- 100 g peas (fresh or frozen)
- 1 red onion
- 1 small chili (optional)
- 50 g cilantro
- 50 g mint
- 2 tbsp sesame seeds
Peanut Dressing:
- 100 g peanut butter
- 2 tbsp soy sauce
- 1 tbsp lime juice
- 1 tbsp honey or agave syrup
- 1 tbsp water (if needed)
- 1 garlic clove (minced)
Instructions:
1. Cook the rice noodles according to the package instructions. Drain and rinse under cold water.
2. Slice the cucumber, bell pepper, carrot, and red onion into thin strips.
3. Lightly cook the peas if using frozen, and let them cool.
4. Prepare the peanut dressing by mixing all the dressing ingredients in a bowl. Add water as needed to achieve the desired consistency.
