A delicious and quick-to-make vegetable pasta, perfect for a weekday dinner. Preparation Time: 30 minutes

Ingredients:
- 300 g pasta (e.g., spaghetti or penne) - 2 tablespoons olive oil
- 1 onion, chopped
- 2 garlic cloves, crushed
- 1 bell pepper, diced
- 1 zucchini, sliced
- 200 g cherry tomatoes, halved
- 100 g fresh spinach
- Salt and pepper to taste
- 50 g Parmesan cheese, grated (optional)
- Fresh basil for garnish (optional)
Instructions:
1. Cook the pasta according to the package instructions in salted water. Drain and set aside. 2. Heat olive oil in a large skillet over medium heat. Add onion and garlic, sauté until softened.
3. Add bell pepper and zucchini, continue to sauté for about 5 minutes.
4. Add cherry tomatoes and cook for a few more minutes until tomatoes begin to soften.
5. Stir in fresh spinach and cook until wilted.
6. Mix the cooked pasta with the vegetables. Season with salt and pepper.
7. Serve with grated Parmesan and fresh basil if desired.
