Creamy Vegetable Soup with Organic Feta Cheese

A delicious and nutritious vegetable puree soup that comes together quickly, perfect for lunch or a light dinner. Preparation Time: 30 minutes
Serving Size: 4 servings
Ingredients:
- 1 kg cabbage (e.g., white cabbage or leek cabbage)- 2 potatoes
- 2 carrots
- 1 onion
- 2 garlic cloves
- 6 dl vegetable broth
- 200 g organic feta cheese
- Salt and pepper to taste
- Olive oil for sautéing
- Fresh parsley (optional)
Instructions:
1. Peel and chop the onion, garlic, potatoes, and carrots.2. Heat olive oil in a large pot and sauté the onion and garlic until soft.
3. Add the chopped potatoes, carrots, and cabbage to the pot. Sauté for a few minutes.
4. Pour in the vegetable broth and bring to a boil, cooking for about 20 minutes until the vegetables are tender.
5. Blend the soup with an immersion blender or in a regular blender until smooth.
6. Season with salt and pepper. Serve the soup warm topped with feta cheese and fresh parsley.
