Ingredients:

- 1 kg cabbage (e.g., white cabbage or leek cabbage)
- 2 potatoes
- 2 carrots
- 1 onion
- 2 garlic cloves
- 6 dl vegetable broth
- 200 g organic feta cheese
- Salt and pepper to taste
- Olive oil for sautéing
- Fresh parsley (optional)

Instructions:

1. Peel and chop the onion, garlic, potatoes, and carrots.
2. Heat olive oil in a large pot and sauté the onion and garlic until soft.
3. Add the chopped potatoes, carrots, and cabbage to the pot. Sauté for a few minutes.
4. Pour in the vegetable broth and bring to a boil, cooking for about 20 minutes until the vegetables are tender.
5. Blend the soup with an immersion blender or in a regular blender until smooth.
6. Season with salt and pepper. Serve the soup warm topped with feta cheese and fresh parsley.
