Ingredients:
- 200 g quinoa - 400 ml water
- 1 tsp salt
- 1 avocado
- 1 red bell pepper
- 1 cucumber
- 200 g black beans (canned)
- 100 g corn (canned)
- 1 lime
- 2 tbsp olive oil
- 1 tsp paprika
- Salt and pepper to taste
- Fresh herbs (e.g., cilantro or parsley)
Instructions:
1. Rinse quinoa under cold water. Cook quinoa in water with salt for 15-20 minutes until soft and water is absorbed. 2. Chop avocado, bell pepper, and cucumber into small pieces.
3. In a bowl, combine cooked quinoa with black beans and corn.
4. Squeeze lime juice into the mixture and add olive oil, paprika, salt, and pepper. Mix well.
5. Gently fold in the chopped vegetables.
6. Garnish with fresh herbs and serve immediately.
