Ingredients:
- 200 g couscous - 2 dl water
- 1 cucumber
- 1 bell pepper (preferably red or yellow)
- 150 g cherry tomatoes
- 100 g feta cheese
- 1 dl fresh parsley
- 3 tbsp olive oil
- 2 tbsp lemon juice
- Salt and pepper to taste
Instructions:
1. Boil water in a pot and add couscous. Cover the pot and let the couscous steam for about 5 minutes.2. Chop the cucumber, bell pepper, and cherry tomatoes into small pieces.
3. Crumble the feta cheese and chop the parsley.
4. In a large bowl, combine the couscous, vegetables, feta cheese, and parsley.
5. Prepare the dressing by mixing olive oil, lemon juice, salt, and pepper. Pour the dressing over the salad and mix well.
6. Serve immediately or let it marinate in the refrigerator before serving.
