A delicious Asian mushroom broth filled with flavor, served with dumplings. This soup brings the taste of the forest to your plate and pairs well with various proteins. Preparation Time: 2 hours

Ingredients:
For the Broth:
- 3 tbsp oil
- 1 onion, diced
- 2 carrots, sliced
- 3 garlic cloves, minced
- 2 star anise
- 3 large porcini mushrooms, chopped
- 2 liters water
- 2 tbsp black rice vinegar
- 4-5 tbsp soy sauce
- Pinch of katsuboshi (optional)
- ½ tsp sesame oil
For the Soup:
- 1 bunch asparagus, cut into pieces
- 1 bok choy (or Chinese cabbage), chopped
- Dumplings (or noodles + desired protein)
For the Dumpling Dough:
- 5 dl all-purpose flour
- 2.2 dl boiling water
- Pinch of salt
For the Dumpling Filling:
- 300 g ground chicken
- 1 egg
- 1 small red spring onion, finely chopped (or ½ red onion)
- 2 garlic cloves, minced
- 1 large or 2 small carrots, grated or finely chopped
- About a thumb-sized piece of ginger, grated
- Fish sauce (about 1-1.5 tbsp)
- 2 spring onions, finely chopped
- 0.5 dl toasted sesame seeds
- 2 dl mushrooms, chopped (e.g., chanterelle, honey fungus, or porcini)
Instructions:
1. Heat a large pot and add the oil. Add the diced onion, carrots, garlic, and star anise. Sauté until the onions and carrots are slightly browned.
2. Add the chopped porcini mushrooms and water. Bring to a boil and skim off any foam from the surface.
3. Season the broth with the remaining ingredients and let it simmer for about 1.5 hours. Strain the broth back into the pot and taste. Add more soy sauce if needed.
4. Prepare the dumpling dough by mixing the flour, boiling water, and salt. Knead the dough until smooth.
5. Prepare the dumplings using the filling and fold them according to your preferred method.
6. Once the broth is ready, add the uncooked dumplings and bite-sized vegetables to the boiling broth. Cook for about 8 minutes until the dumplings are cooked through.
