A delicious and nutritious vegetable pasta that's perfect for a weekday meal. It takes only 30 minutes to prepare and is packed with flavor! Preparation Time: 30 minutes
Serving Size: 4 servings
Ingredients:
- 300 g pasta (such as spaghetti or fusilli)
- 2 tbsp olive oil
- 1 onion, chopped
- 2 garlic cloves, crushed
- 1 bell pepper, diced
- 1 zucchini, sliced
- 150 g cherry tomatoes, halved
- 100 g spinach
- Salt and pepper to taste
- 50 g grated Parmesan cheese (optional)
Instructions:
1. Cook the pasta according to the package instructions in salted water. Drain and reserve some of the cooking water.
2. Heat the olive oil in a large pan over medium heat. Add the onion and sauté until soft.
3. Add the crushed garlic and diced bell pepper. Cook for about 3-4 minutes.
4. Add the zucchini and cherry tomatoes to the pan. Cook until the vegetables are tender.
5. Stir in the spinach and mix until it wilts.
6. Combine the cooked pasta with the vegetables. Add a little reserved pasta cooking water if needed for a saucier consistency.
7. Season with salt and pepper. Serve with grated Parmesan cheese if desired.
