A delicious Indian tandoori chicken marinated in yogurt and spices, served with aromatic yellow basmati rice and refreshing raita. This dish brings authentic flavors and aromas straight from India.
Preparation Time: 1 hour + marinating (at least 4 hours, preferably overnight)

Ingredients

- Tandoori Chicken:
- 1 kg chicken
- 2 dl plain yogurt
- 1 tbsp fresh grated ginger
- 3 garlic cloves
- 1 tbsp Garam masala
- ½ tsp cayenne pepper
- 2 tbsp coriander
- 2 tsp lemon juice
- 1-2 tbsp dried mint
- 1 tsp cumin
- 1 tsp turmeric
- 1 dried chili
- (1-2 tsp chili paste)
- 1 tsp salt
- 1½ tsp curry powder
- 1½ tsp paprika
- Aromatic Yellow Basmati Rice:
- 3 dl basmati rice
- 2-3 tbsp ghee
- 2 garlic cloves
- ½ tsp cumin
- 4 whole cloves
- 1 tsp turmeric
- 5 dl water
- 1 Indian bay leaf
- 1 tsp salt
- 1 cinnamon stick
- Cucumber Raita:
- 5 dl plain yogurt
- 10 cm cucumber
- 2 tbsp fresh mint
- 2 tomatoes
- ½ tsp cumin
- 1 pinch cayenne pepper
- 1 tsp salt

Instructions

1. Marinade:
- Toast coriander and cumin in a dry pan, let cool, and grind in a mortar.
- Mix yogurt, ground spices, ginger, turmeric, Garam masala, paprika, cayenne pepper, salt, lemon juice, and garlic in a bowl.
- Add chicken to the marinade and mix well. Cover with plastic wrap and refrigerate for at least 4 hours, preferably overnight.
2. Smoking:
- Place chicken in a smoker and smoke for about an hour.
- Transfer chicken pieces to a baking dish, pour over remaining marinade, and bake at 200°C (400°F) for about 30-40 minutes until fully cooked. Increase temperature at the end for a nice finish.
3. Rice:
- Rinse basmati rice and soak in cold water for about 20 minutes.
- Sauté chopped onion in ghee, add garlic and spices. Stir in rice, add the cinnamon stick, water, and salt. Cook covered on low heat for 15-20 minutes.
4. Raita:
- Drain yogurt in a sieve. Peel and slice cucumber, blanch tomatoes, and remove seeds before dicing.
- Mix all ingredients in a bowl and let chill in the refrigerator before serving.
5. Serving:
- Serve tandoori chicken with yellow rice and refreshing raita.
