A delicious and hearty dish featuring barley and mushrooms, infused with rich tandoori spices.
Preparation Time: 40 minutes
Serving Size: 4 servings
Ingredients:
- 1 tablespoon oil
- 1 large onion, chopped
- 8 jumbo mushrooms, sliced
- 1 cup dark soy granules
- 1 cup pearl barley
- 4 cups water
- 2 tablespoons tandoori spice mix
- Salt and pepper to taste
- Fresh coriander for garnish
Instructions:
1. Heat the oil in a large skillet over medium heat.
2. Add the chopped onion and sauté until soft and translucent.
3. Add the sliced jumbo mushrooms to the skillet and cook until they are tender.
4. Stir in the soy granules and cook for a few more minutes.
5. Mix in the pearl barley until well combined.
6. Pour the water into the skillet and add the tandoori spice mix, salt, and pepper. Stir everything together.
7. Bring the mixture to a boil, then reduce the heat and cover. Cook for about 20-25 minutes, or until the barley is tender and the liquid is absorbed.
8. Taste and adjust seasoning if necessary.
9. Serve warm, garnished with fresh coriander.
