Ingredients:
- 450 g unseasoned chicken strips - 1 tablespoon olive oil
- 1 onion
- 4 garlic cloves
- 1 leek
- 2-3 carrots (depending on size)
- 200 g barley groats (soaked)
- 1 liter chicken broth
- Salt and pepper to taste
- Fresh parsley (for garnish)
Instructions:
1. Peel and chop the onion, garlic, leek, and carrots. 2. Heat olive oil in a large skillet. Add chicken strips and sauté until golden brown.
3. Add the chopped onion, garlic, leek, and carrots to the skillet. Sauté the vegetables for a few minutes until they soften.
4. Stir in the soaked barley groats and chicken broth. Mix well.
5. Allow the mixture to simmer on low heat for about 20 minutes, until the barley is cooked and the liquid is absorbed.
6. Season with salt and pepper to taste.
7. Serve the ohratto garnished with fresh parsley.
