A delicious and nutritious home-style barley dish, perfect for weeknight dinners or special occasions. Preparation Time: 30 minutes
Serving Size: 4 servings
Ingredients:
- 2 dl barley flakes
- 1 onion
- 2 garlic cloves
- 4 dl vegetable broth
- 2 dl frozen peas
- 1 dl grated Parmesan cheese
- 2 tbsp olive oil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions:
1. Peel and finely chop the onion and garlic.
2. Heat olive oil in a large skillet over medium heat. Add the onion and garlic, and sauté for about 5 minutes until soft.
3. Add the barley flakes to the skillet and mix well. Sauté for a moment longer.
4. Gradually add the vegetable broth, stirring continuously. Allow the barley to cook for about 15-20 minutes, until tender and creamy.
5. Stir in the frozen peas and grated Parmesan cheese. Mix well and season with salt and pepper.
6. Remove from heat and let it rest for a few minutes. Garnish with fresh parsley before serving.
