A delightful cheesecake perfect for holiday celebrations, featuring a creamy filling and homemade apple jam that captures the essence of Christmas. Preparation Time: 30 min + 4 h chilling

Ingredients:
- 200 g digestive biscuits - 100 g butter
- 400 g cream cheese
- 200 g sugar
- 2 dl heavy cream
- 3 eggs
- 1 tbsp vanilla sugar
- 1 dl Red Love apple jam (or any apple jam)
Instructions:
1. Crush the digestive biscuits and melt the butter. Mix the biscuit crumbs with the butter and press tightly into the bottom of a springform pan. 2. Beat the cream cheese and sugar together until smooth. Add the eggs one at a time, beating well after each addition.
3. Add the vanilla sugar and mix until combined.
4. Whip the heavy cream until soft peaks form and gently fold it into the cream cheese mixture.
5. Pour the mixture over the biscuit base and smooth the top.
6. Spoon the apple jam on top of the cheesecake and gently swirl it in, being careful not to mix it completely.
7. Allow the cheesecake to set in the refrigerator for at least 4 hours, preferably overnight.
8. Serve the cheesecake in desired shapes and enjoy!
