Delicious and chewy tahini coconut cookies that resemble the taste and texture of halva. Coconut sugar adds a hint of licorice flavor. Preparation Time: 15 minutes + baking time
Serving Size: About 20 cookies
Ingredients:
- 1 cup tahini - 3/4 cup coconut sugar (or stevia)
- 1 large egg
- 2.5 tablespoons almond flour
- 2 tablespoons cacao nibs
- 2 tablespoons shredded coconut
- 1 tablespoon protein powder
- 1 teaspoon liquid vanilla extract
Instructions:
1. Measure all ingredients into a bowl. 2. Mix the ingredients well until the dough is smooth.
3. Shape the dough into small balls and place them on a baking sheet lined with parchment paper.
4. Bake at 350°F (175°C) for about 10-12 minutes, until the cookies are lightly golden brown.
5. Allow to cool before enjoying.
