A creamy and comforting soup made with Jerusalem artichokes, perfect for a cozy meal.

Serving Size: 4 servings
Ingredients:
- 500 g Jerusalem artichokes
- 1 onion
- 2 garlic cloves
- 1 potato
- 1 l vegetable broth
- 2 dl cream
- Salt to taste
- Black pepper to taste
- Fresh parsley for garnish
- 2 tbsp olive oil
Instructions:
1. Peel the Jerusalem artichokes, onion, garlic, and potato. Cut them into small pieces.
2. Heat the olive oil in a pot and sauté the onion and garlic until soft.
3. Add the Jerusalem artichokes and potato to the pot, mixing well.
4. Pour in the vegetable broth and bring to a boil. Reduce the heat and let it simmer for about 20-25 minutes until all the vegetables are tender.
5. Blend the soup using an immersion blender or a regular blender until smooth.
6. Stir in the cream and season with salt and black pepper. Heat the soup again, but do not boil.
7. Serve the soup garnished with fresh parsley.
