A delicious and hearty yogurt barley soup that brings together flavors and aromas, perfect for warming the body and soul. Preparation Time: 30 minutes
Serving Size: 4 servings
Ingredients:
- 1 dl barley groats- 1 liter water
- 2 dl natural yogurt
- 1 dl fresh lemon juice
- 1 tsp salt
- 1/2 tsp black pepper
- 2 tbsp olive oil
- Fresh parsley or mint for garnish
Instructions:
1. Rinse the barley groats in cold water.2. Boil the barley groats in water with salt for about 20 minutes, until soft.
3. Drain any excess water and transfer the barley groats to a pot.
4. Add yogurt, lemon juice, black pepper, and olive oil to the barley. Mix well until the mixture is smooth.
5. Heat the soup over low heat but do not bring it to a boil.
6. Serve the soup warm and garnish with fresh parsley or mint.
