Tabbouleh Salad

A refreshing Middle Eastern salad made with bulgur, fresh vegetables, and herbs.
Preparation Time: 45 minutes
Serving Size: 4 servings
Ingredients:
- 1 dl bulgur wheat
- 2 dl boiling water
- 1 cucumber
- 2 tomatoes
- 1 small red onion
- 1 dl fresh parsley
- 1 dl fresh mint
- 3 tbsp olive oil
- 2 tbsp lemon juice
- Salt and pepper to taste
Instructions:
1. Rinse the bulgur wheat under cold water and place it in a bowl. Pour 2 dl of boiling water over it and cover the bowl with a cloth. Let it soak for about 30 minutes.
2. Dice the cucumber, tomatoes, and red onion into small cubes.
3. Finely chop the parsley and mint.
4. Once the bulgur has soaked, mix it with the diced vegetables, parsley, and mint in a large bowl.
5. Add the olive oil, lemon juice, salt, and pepper. Mix well.
6. Let the salad chill in the refrigerator for about 15-30 minutes before serving.
Serve Tabbouleh salad with lamb meatballs or your favorite side dish.
