Serving Size: 4 servings
Ingredients:
- 300 g spaghetti
- 150 g bacon or pancetta
- 2 large eggs
- 100 g grated Parmesan cheese
- 2 garlic cloves, minced
- Salt to taste
- Black pepper to taste
- Fresh parsley for garnish (optional)
Instructions:
1. Cook the spaghetti in salted water according to package instructions until al dente.
2. Meanwhile, heat a skillet over medium heat. Add the bacon or pancetta and cook until crispy. Add the minced garlic and sauté for an additional minute.
3. In a bowl, crack the eggs and add the grated Parmesan cheese. Mix well until smooth.
4. Once the pasta is cooked, drain it but reserve about 100 ml of the cooking water. Add the pasta to the skillet with the bacon.
5. Remove the skillet from the heat and pour the egg mixture over the pasta. Stir quickly to ensure the eggs cook gently from the residual heat. Add reserved pasta water as needed until creamy.
6. Season with salt and black pepper. Serve immediately, garnished with fresh parsley if desired.
