Ingredients:
- 1 cup bulgur
- 1 red onion
- 1 cucumber
- 2 tomatoes
- 2 green onions
- 1 cup fresh parsley
- 1 cup fresh mint

- Lettuce leaves for serving
- Lemon wedges for garnish (optional)
Instructions:
1. Cook the bulgur according to package instructions, about 15 minutes, and let it cool.
2. Peel and finely chop the red onion.
3. Finely chop the cucumber, tomatoes, green onions, parsley, and mint.
