Tabbouleh - Lebanese Salad

A refreshing and flavorful Lebanese salad, perfect as a side dish or a light main course. Packed with fresh herbs and vegetables, this salad is both delicious and nutritious. Preparation Time: 30 minutes
Serving Size: 4-6 servings
Ingredients:
- 1.5 cups bulgur- 1 small cucumber, diced
- 1 red onion, chopped
- 1.5 cups fresh parsley, finely chopped
- 1.5 teaspoons salt
- A pinch of cinnamon
- A pinch of nutmeg
- A pinch of cloves
- ½ cup green onions, finely chopped
- 2 tomatoes, diced
- 5 cups water
- ½ cup lemon juice
- 1 cup fresh mint or lemon balm, finely chopped
- 2 tablespoons olive oil
Instructions:
1. Bring water to a boil in a pot and add bulgur. Cook on low heat for about 10 minutes, until the bulgur is tender. Drain excess water and let it cool.2. Once the bulgur is cool, transfer it to a large bowl.
3. Add cucumber, red onion, parsley, salt, cinnamon, nutmeg, cloves, green onions, and tomatoes to the bowl, and mix well.
4. In a separate bowl, combine lemon juice, mint or lemon balm, and olive oil. Pour the mixture over the salad and gently mix.
5. Allow the salad to chill in the refrigerator for about 15-30 minutes before serving.
