Serving Size: 4-6 servings
Ingredients:
- 1.5 cups bulgur wheat- 2 cups water
- 1 red onion
- 1 cucumber
- 2 tomatoes
- 2 green onions
- 1 cup fresh parsley
- 0.5 cup fresh mint
- Salt to taste
- Black pepper to taste
- Lettuce leaves for serving
- Lemon wedges for garnish (optional)
Instructions:
1. Cook the bulgur according to the package instructions for about 15 minutes, then allow it to cool.2. Peel and finely chop the red onion.
3. Dice the cucumber, tomatoes, and green onions, and chop the parsley and mint.
4. In a large bowl, combine all the chopped ingredients with the cooled bulgur.
5. Season the salad with salt and black pepper to taste.
6. Serve the tabbouleh on a platter lined with lettuce leaves and garnish with lemon wedges if desired.
