Stuffed Chicken Breasts in Air Fryer

A delicious and flavorful dish featuring chicken breasts stuffed with a savory cheese and spinach filling, served with roasted vegetables and gremolata. Preparation Time: 35 minutes
Serving Size: 4 servings
Ingredients:
- 4 boneless, skinless chicken breasts - Fine sea salt
- Cracked black pepper
- Paprika powder
- 100 g feta cheese
- 1 buffalo mozzarella cheese
- 1 dl grated Parmesan cheese
- 50 g baby spinach
- A large handful of fresh basil
- 3 tbsp tomato paste
- 2 tsp liquid honey
Instructions:
1. Cut a deep pocket into each chicken breast, being careful not to cut all the way through. 2. Season the outside of the chicken breasts with salt, pepper, and paprika powder.
3. Prepare the filling: crumble the feta and mozzarella cheese with a fork, then add grated Parmesan, chopped spinach, chopped basil, tomato paste, and honey. Mix well and season with salt and pepper if needed.
4. Stuff the chicken pockets with the prepared filling, fold the edges together, and secure with toothpicks.
5. Place the stuffed chicken breasts in the air fryer basket and cook at 200°C (390°F) for 15 minutes, turning once during cooking.
6. Remove toothpicks and serve with roasted vegetables and gremolata.
Roasted Vegetables

- Sweet potatoes - Cherry tomatoes
- Broccoli
- Olive oil
- Fine sea salt
- Cracked black pepper
Instructions:
1. Preheat the oven to 220°C (428°F). 2. Peel the sweet potatoes and cut them into small pieces. Cut the broccoli into small florets.
3. In a baking dish, drizzle olive oil and add sweet potatoes and tomatoes. Season with salt and pepper, toss to combine, and place in the oven for 15 minutes.
4. Once the timer goes off, add the broccoli to the dish, stir, and roast for another 15 minutes.
Gremolata

- Zest of 1 lemon - 1 bunch of fresh parsley
- 1 clove of garlic, grated
- (A pinch of salt)
- (A drizzle of olive oil)
Instructions:
1. Finely chop the parsley leaves. 2. Combine all ingredients together and serve with the roasted vegetables.
