- 2 pork chops
- Butter and oil for frying
- Blue cheese butter
- Salt

Instructions

1. Prepare the blue cheese butter in advance.
2. Cut a pocket into each chop from the fatty side down to the bone.
3. Slice the blue cheese butter and place a couple of slices inside each chop.
4. Close the pocket and pat the chop flat.
5. Sear the chops in a hot pan until browned.
6. Lower the heat and cook the chops until fully cooked through.
