Serving Size: 4 servings
Ingredients:
- 1 cup green lentils
- 2 cups water
- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 2 garlic cloves, crushed
- 1 bell pepper, diced
- 1 cucumber, sliced
- 1/2 cup cherry tomatoes, halved
- 1/4 cup fresh parsley, chopped
- 1/4 cup tahini
- 2 tablespoons lemon juice
- Salt and pepper to taste
Instructions:
1. Rinse the lentils under cold water and place them in a pot with the water.
2. Bring the lentils to a boil over medium heat and cook for about 20-25 minutes until tender but not mushy.
3. In a skillet, heat the olive oil and add the chopped onion. Sauté for about 5 minutes until soft.
4. Add the crushed garlic and diced bell pepper to the skillet and cook for an additional 3-4 minutes.
5. In a bowl, combine the cooked lentils, sautéed vegetables, cucumber, cherry tomatoes, and parsley.
6. In a separate bowl, mix together the tahini, lemon juice, salt, and pepper until smooth.
7. Pour the tahini mixture over the lentil bowl and mix well.
8. Serve immediately and enjoy!
