Ingredients:
- 200 g pasta (e.g., spaghetti or fusilli)
- 2 eggs
- 2 tbsp olive oil
- 2 garlic cloves, minced
- 100 g spinach (fresh or frozen)
- 50 g Parmesan cheese, grated
- Salt and pepper to taste
Instructions:
1. Cook the pasta in salted water according to package instructions. Drain and reserve a little cooking water.
2. Heat olive oil in a pan over medium heat and add minced garlic. Sauté until golden brown.
3. Add spinach to the pan and cook until wilted.
4. Crack the eggs into the pan and stir quickly until the eggs are set but still soft.
5. Add the cooked pasta to the pan and mix well. If needed, add a little reserved cooking water to keep the pasta moist.
6. Season with salt and pepper. Sprinkle grated Parmesan cheese on top and serve immediately.
