Ingredients:
- 400 g chicken breast
- 2 tbsp soy sauce
- 1 tbsp honey
- 2 garlic cloves, minced
- 1 tbsp ginger, grated
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 200 g green beans, trimmed
- 150 g rice
- 400 ml coconut milk
- Juice of 1 lime
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions:
1. Marinate the chicken breast in soy sauce, honey, minced garlic, and grated ginger for about 15 minutes.
2. Cook the rice in coconut milk according to the package instructions until creamy and tender.
3. Heat oil in a pan and sauté the marinated chicken breasts until golden brown and cooked through, about 6-8 minutes on each side.
4. Add the sliced bell peppers and green beans to the pan, and stir-fry for another 5 minutes until the vegetables are tender yet crisp.
5. Season with salt, pepper, and lime juice to taste.
6. Serve the chicken and vegetables over the rice, garnished with fresh cilantro.
