Ingredients:
- 200 g chicken breast - 1 dl quinoa
- 2 dl water
- 1 red bell pepper
- 1 cucumber
- 1 avocado
- 1 dl cherry tomatoes
- 2 tbsp olive oil
- 1 tbsp lemon juice
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions:
1. Cook quinoa according to package instructions. 2. Cut chicken breasts into strips and sauté them in olive oil over medium heat until cooked through. Season with salt and pepper.
3. Chop the red bell pepper, cucumber, avocado, and cherry tomatoes.
4. In a large bowl, combine all the vegetables and quinoa. Add the cooked chicken strips.
5. Mix the olive oil and lemon juice, then drizzle the dressing over the salad and toss well.
6. Garnish with fresh parsley and serve.
