Ingredients

- 600 g rainbow trout fillet
- 2 tbsp salt
Marinade:
- 200 ml white vinegar
- 50 ml red wine vinegar
- 200 ml light beer
- 100 ml water
- 2 tbsp sugar
- 1 tbsp black peppercorns
- 2 bay leaves
- 1 red onion, sliced
- 2-3 sprigs fresh dill

Instructions

1. Sprinkle salt over the rainbow trout fillets and let them marinate for about 30 minutes.
2. Prepare the marinade by mixing all marinade ingredients in a saucepan. Heat to boiling and then let it cool.
3. Place the trout fillets in a deep dish and pour the cooled marinade over them, ensuring the fish is completely submerged.
4. Cover the dish with plastic wrap and let the fish marinate in the refrigerator for at least 12 hours, preferably overnight.
5. Remove the fish from the refrigerator and drain the marinade. Cut the fillets into serving pieces and serve with fresh bread.
