Delicious apple-filled cookies that are the perfect blend of love and flavor. Ideal for breakfast or as a sweet treat with coffee. Preparation Time: 1 hour
Serving Size: 30-40 cookies
Ingredients:
- Dough:- 1 dl sugar
- 100 g butter
- 1 egg
- 3 dl all-purpose flour
- 2 tbsp potato starch
- 1 tsp baking powder
- Zest of 1/2 organic lemon
- Apple Filling:
- 2 apples
- 1 tbsp orange, peach, or apricot jam
- 1 tbsp butter
- A squeeze of lemon juice
- 1 tsp cinnamon
Instructions:
1. Cream the softened butter and sugar together. Add the egg and mix well.2. In a separate bowl, combine the dry ingredients and lemon zest. Gradually add this dry mixture to the butter-sugar mixture until smooth.
3. Once the dough is uniform, refrigerate it for 30 minutes.
4. Peel and chop the apples into small pieces. In a saucepan, combine the apples with the other filling ingredients and cook gently for about 15 minutes. Mash the filling with a fork and let it cool.
5. Take a small piece of dough and shape it into a palm-sized disc using floured hands. Place about a teaspoon of filling in the center and fold the dough over to seal. Place the cookies on a baking sheet with the seam side down.
6. Gently press the tops of the cookies before baking. Bake at 180°C (350°F) for about 15 minutes or until the tops are slightly golden.
