Ingredients:
- 3 eggs- 1 cup milk
- 1 cup gluten-free flour blend
- 1/2 cup sugar
- Juice and zest of 1 lemon
- 1 tsp vanilla sugar
- 1/2 tsp salt
- 2 tbsp melted butter
- Powdered sugar (for garnish)
Instructions:
1. In a bowl, whisk the eggs and sugar until fluffy.2. Add the milk, lemon juice, and lemon zest, and mix well.
3. In another bowl, combine the gluten-free flour blend, vanilla sugar, and salt.
4. Gradually add the dry mixture to the egg-milk mixture, stirring until smooth.
5. Stir in the melted butter until combined.

7. Pour batter onto the skillet and cook for about 2-3 minutes on each side until the pancake is beautifully golden brown.
8. Serve the pancakes dusted with powdered sugar and, if desired, with lemon slices.
