Ingredients:
- 200 g dark chocolate
- 400 ml coconut cream
- 2 tbsp powdered sugar
- 1 tsp vanilla extract
- 200 g fresh raspberries
Instructions:
1. Melt the dark chocolate in a heatproof bowl over simmering water or in the microwave, then let it cool slightly.
2. In a separate bowl, whip the coconut cream, powdered sugar, and vanilla extract until the mixture is soft and fluffy.
3. Gently fold the melted chocolate into the coconut cream mixture until well combined.
4. Spoon the chocolate coconut mousse into serving bowls or glasses.
5. Top with fresh raspberries just before serving.
6. Allow the mousse to chill in the refrigerator for at least one hour before serving.
