Kranssi - Sweet Spiced Bread Ring

Ingredients:
- 2 1/2 dl milk
- 2 packets dry yeast
- 1 dl sugar
- 3/4 tsp salt
- 1 tbsp cardamom
- 1 egg
- about 9 dl all-purpose flour
- 150 g butter or baking margarine
Filling:
- 50 g butter or baking margarine
- 1 tbsp sugar
- 1 tbsp lemon or orange juice
- 150 g dark chocolate
- 50 g dried cranberries
- 200 g almond flour
Topping:
- powdered sugar
Instructions:
1. Heat the milk to 42 degrees Celsius. Mix the dry yeast with a small amount of flour and add it to the milk.
2. Add sugar, salt, cardamom, egg, and some of the flour. Mix well.
3. Add the softened butter and knead in the remaining flour. Let the dough rise covered with a cloth in a warm place for about 20 minutes.
4. Chop the chocolate into coarse pieces. Melt the butter and mix in the sugar, cranberries, chocolate pieces, juice, and almond flour.
5. Turn the risen dough onto a floured surface and press out the air bubbles. Roll the dough into a rectangle measuring 30 x 70 cm. Spread the filling over the dough and roll it up from the long side.
6. Place the rolled dough onto a baking sheet lined with parchment paper and shape it into a ring. Cut slits into the ring about 1 cm wide, almost to the bottom, and twist the pieces alternately.
7. Let the kranssi rise covered for about 30 minutes.
8. Bake in a preheated oven at 200 degrees Celsius for about 15 minutes.
9. Once cooled, dust the top of the kranssi generously with powdered sugar.
