Ingredients:

- 6 eggs
- 1 cup milk
- 200 g feta cheese
- 1 red bell pepper
- 1 green bell pepper
- 1 cup fresh basil
- 1 cup cherry tomatoes
- 1 avocado
- 1 package of croissants
- Salt and pepper to taste
- Olive oil for cooking

Instructions:

1. Begin by preparing the vegetables. Dice the red and green bell peppers and halve the cherry tomatoes.
2. Crack the eggs into a bowl and add the milk. Whisk the mixture well and season with salt and pepper.
3. Heat olive oil in a frying pan over medium heat. Add the bell peppers and sauté for about 3-4 minutes until they soften.
4. Pour the egg mixture over the vegetables in the pan. Allow it to cook on low heat until the edges of the omelette start to set.
5. Crumble the feta cheese on top of the omelette and add the cherry tomatoes. Cover with a lid and cook for a few more minutes until the eggs are fully cooked.
6. Slice the avocado.
7. Serve the omelette with croissants, garnished with fresh basil and avocado slices.
