- 6 eggs
- 1 cup milk
- 1 bell pepper (red or yellow)
- 1 cup spinach
- 1 cup shredded cheese (e.g., mozzarella or cheddar)
- 1/2 cup onion
- Salt and pepper to taste
- 2 tablespoons olive oil

Instructions:

1. Preheat the oven to 180°C (350°F).
2. Chop the bell pepper and onion into small cubes.
3. Heat olive oil in a frying pan and sauté the onion and bell pepper for a few minutes.
4. Add spinach to the pan and cook until it wilts.
5. In a bowl, whisk together the eggs, milk, salt, and pepper until well combined.
6. Add the sautéed vegetables to the egg mixture along with the shredded cheese and mix gently.
