Ingredients:
- 1 tablespoon tomato paste
- 2 onions, sliced
- 2 tablespoons mustard
- 2 cups beef broth
- 1 package (about 8 oz) mushrooms (such as cremini or button)
- 2 tablespoons butter
- 2 tablespoons oil
- 1 lb beef tenderloin, sirloin, or flank steak, sliced
- ½ cup sour cream
- 2 tablespoons all-purpose flour
- Salt and black pepper to taste
Instructions:
1. Let the beef sit at room temperature for about 2 hours before cooking.
2. In a large skillet, heat the butter and oil over medium heat.
3. Add the sliced onions and sauté until they are soft and slightly golden.
4. Add the mushrooms and continue cooking until they are tender.
5. Stir in the beef slices and cook until they are nicely browned.
6. Mix in the tomato paste, mustard, flour, and beef broth. Allow to simmer on low heat for about 10 minutes.
7. Stir in the sour cream and mix well. Season with salt and black pepper to taste.
8. Serve with potatoes or rice.
