- 3 medium carrots (grated)
- 1 cup sugar
- 1/2 cup vegetable oil
- 3 eggs

- 1 tsp baking soda
- 1 tsp cinnamon
- 1/2 tsp salt
- 1/2 cup nuts (e.g., walnuts or pecans, chopped)
- 1/2 cup raisins (optional)
Instructions:
1. Preheat the oven to 350°F (175°C) and grease a muffin tin or line it with paper liners.
2. Grate the carrots finely.
3. In a bowl, mix the sugar and oil. Add the eggs one at a time, mixing well after each addition.
4. Stir in the grated carrots until well combined.
