Ingredients:
- 2 cups leftover mashed potatoes
- 3.5 oz frozen spinach (thawed and drained)
- 2 eggs
- 1/2 cup all-purpose flour
- A pinch of salt
- A pinch of nutmeg
- Butter for frying
Instructions:
1. Blanch the spinach, chop it finely, and drain any excess moisture.
2. Mix the chopped spinach into the mashed potatoes.
3. In a bowl, whisk together the eggs, flour, salt, and nutmeg. Combine this mixture with the potato mixture. The batter should be slightly thicker than traditional pancake batter. If it seems too loose, add a little more flour.
4. Let the batter rest at room temperature for about 30 minutes before frying.
5. Heat a frying pan and melt some butter in it. Drop three small pancakes at a time onto the pan.
6. Cook over medium heat, flipping them when they hold together well.
7. The recipe makes about 15-18 small fritters.
