A delicious and crispy pumpkin fritter recipe that's perfect as a snack or appetizer. Preparation Time: 30 minutes
Serving Size: 4 servings
Ingredients:
- 400 g pumpkin (peeled and cubed)
- 1 dl all-purpose flour
- 1 dl cornmeal
- 1 egg
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp paprika
- 1/2 tsp garlic powder
- Oil for frying
Instructions:
1. Boil the pumpkin cubes until soft, about 10-15 minutes. Drain and mash.
2. In a bowl, mix the pumpkin puree, all-purpose flour, cornmeal, egg, salt, black pepper, paprika, and garlic powder until well combined.
3. Heat oil in a frying pan over medium heat.
4. Add a tablespoon of the batter to the hot oil and fry the fritters for about 3-4 minutes on each side, or until golden brown.
5. Remove the fritters and place them on paper towels to drain excess oil.
6. Serve warm, optionally with yogurt or tahini sauce.
