Spinach and Feta Stuffed Chicken Breasts

Ingredients:
- 4 boneless, skinless chicken breasts - 2 cups fresh spinach, chopped
- 1 cup feta cheese, crumbled
- 1 clove garlic, minced
- 1 tablespoon olive oil
- Salt and pepper to taste
- 1 teaspoon dried oregano
- 1 teaspoon paprika
Instructions:
1. Preheat the oven to 375°F (190°C). 2. In a skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute.
3. Add the chopped spinach and cook until wilted, about 2-3 minutes.
4. Remove from heat and stir in crumbled feta cheese, oregano, salt, and pepper.
5. Carefully cut a pocket into each chicken breast.
6. Stuff each breast with the spinach and feta mixture.
7. Season the outside of the chicken breasts with paprika, salt, and pepper.
8. Place stuffed chicken breasts in a baking dish and bake for 25-30 minutes, or until the chicken is cooked through.
9. Let rest for 5 minutes before serving.
