Spinach and Feta Stuffed Chicken Breast

Ingredients:
- 4 boneless, skinless chicken breasts - 2 cups fresh spinach, chopped
- 1 cup crumbled feta cheese
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Toothpicks or kitchen twine
Instructions:
1. Preheat the oven to 375°F (190°C). 2. In a skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant.
3. Add chopped spinach to the skillet and cook until wilted, about 3-4 minutes. Remove from heat and let cool slightly.
4. In a mixing bowl, combine the cooked spinach and garlic with crumbled feta and oregano. Mix well.
5. Using a sharp knife, carefully cut a pocket in each chicken breast.
6. Stuff each pocket with the spinach and feta mixture, then secure with toothpicks or kitchen twine.
7. Season the outside of the chicken breasts with salt and pepper.
8. Place the stuffed chicken breasts in a baking dish and bake for 25-30 minutes or until the chicken is cooked through and juices run clear.
9. Remove from the oven and let rest for 5 minutes before serving.
