A delightful pasta dish featuring spinach and creamy bread cheese, perfect for a cozy dinner.

Serving Size: 4 servings
Ingredients:
- 500 g pasta (e.g., fusilli or farfalle)
- 300 g frozen spinach
- 250-300 g bread cheese
- 1-2 onions
- 2 garlic cloves
- 1 lemon
- A few cherry tomatoes
- 2 - 2.5 dl cooking cream (plant-based cream works too)
- Oil for frying
- Salt and black pepper
- Grated cheese for topping
Instructions:
1. Preheat the oven to 225 degrees Celsius and bring a pot of salted water to a boil for the pasta.
2. Chop the onions, cube the bread cheese, and quarter the cherry tomatoes.
3. Cook the pasta until almost al dente in the boiling salted water.
4. Sauté the onions in oil in a pan. Add the frozen spinach and heat until thawed. Stir in the cooking cream, cherry tomatoes, and bread cheese. Grate the lemon zest and squeeze in the juice. Season with salt and black pepper.
5. Drain the cooked pasta and transfer it to a baking dish, reserving a bit of the cooking water. Combine it with the spinach and bread cheese sauce, mixing well. Adjust seasoning with more salt and pepper if needed. Sprinkle grated cheese on top.
6. Bake in the oven until the cheese is beautifully browned. Enjoy!
