Recipe:
- 1 can (15 oz) chickpeas, drained and rinsed
- 1 tablespoon olive oil
- 1 teaspoon smoked paprika
- 1 teaspoon cumin
- 1/2 teaspoon cayenne pepper
- Salt and pepper to taste
- 8 small corn tortillas
- 1 avocado, sliced
- 1 cup shredded lettuce
- 1/2 cup diced tomatoes
- Fresh cilantro for garnish
- Lime wedges for serving
Instructions:
1. In a skillet, heat olive oil over medium heat.
2. Add the rinsed chickpeas, smoked paprika, cumin, cayenne pepper, salt, and pepper to the skillet.
3. Cook for about 5-7 minutes, stirring occasionally, until the chickpeas are heated through and slightly crispy.
4. While the chickpeas are cooking, warm the corn tortillas in a separate pan or microwave.
5. Assemble the tacos by placing a portion of the spicy chickpeas on each tortilla.
6. Top with sliced avocado, shredded lettuce, diced tomatoes, and fresh cilantro.
7. Serve with lime wedges on the side for squeezing over the tacos.
