A delicious and nutritious alternative to traditional bread, made using sourdough. The bread has a crispy crust and a soft interior.
Preparation Time: 24 hours (including rising)
Serving Size: 1 loaf

Ingredients:

- 500 g spelt flour
- 350 ml water
- 100 g sourdough starter
- 10 g salt

Instructions:

1. In a bowl, mix the spelt flour, sourdough starter, and water. Knead the dough until it is smooth.
2. Add the salt and knead the dough for a little longer until well combined.
3. Cover the bowl with a cloth and let the dough rise at room temperature for about 12 hours.
4. Once the dough has risen, pour it onto a lightly floured surface and shape it into a loaf.
5. Allow the loaf to rise again for 1-2 hours under a cloth.
6. Preheat the oven to 230°C (450°F) and place a baking sheet lined with parchment paper inside.
7. Score the surface of the loaf with a knife and carefully transfer it to the hot baking sheet.
8. Bake the bread for about 30-35 minutes, until it is golden brown and crispy.
9. Let it cool on a wire rack before slicing.
