This delicious and nutritious vegetable pasta is perfect for a weeknight dinner. It comes together quickly and is sure to please the whole family.

Ingredients:
- 300 g pasta (e.g., spaghetti or penne)
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 garlic cloves, crushed
- 1 red bell pepper, diced
- 1 zucchini, sliced
- 150 g cherry tomatoes, halved
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 50 g grated Parmesan cheese (optional)
- Fresh basil for garnish (optional)
Instructions:
1. Cook the pasta according to package instructions in salted water. Drain and reserve a little cooking water.
2. Heat olive oil in a large skillet over medium heat. Add the chopped onion and sauté for about 3-4 minutes until soft.
3. Add the crushed garlic and diced bell pepper. Sauté for a few minutes until the pepper softens.
4. Add the zucchini and cherry tomatoes. Cook for another 5-7 minutes until all the vegetables are tender.
5. Stir in the cooked pasta and oregano. If needed, add a bit of reserved cooking water to keep the mixture moist. Season with salt and pepper.
6. Serve topped with grated Parmesan cheese and fresh basil if desired.
