A creamy and comforting soup perfect for any season.

Serving Size: 4 servings
Ingredients:
- 8 zucchinis
- 7 new potatoes
- 3 dl small carrots
- Water
- 3 dl spreadable cream cheese (9% fat)
Instructions:
1. Peel and chop the zucchinis, potatoes, and carrots.
2. Place the vegetables in a pot and pour in enough water to cover them.
3. Cook the vegetables over low heat until they are tender.
4. In the last few minutes of cooking, add the cream cheese and stir until melted and well combined.
5. Use an immersion blender to puree the soup until smooth.
6. Serve warm. Enjoy!
