Ingredients:
- 500 g Jerusalem artichokes
- 1 large onion
- 2 cloves smoked garlic
- 1 liter vegetable broth
- 200 ml cream
- 2 tablespoons butter
- Salt to taste
- Pepper to taste
- Fresh parsley for garnish
Instructions:
1. Peel the Jerusalem artichokes and onion. Dice them into small cubes.
2. Heat the butter in a pot and add the diced onion. Sauté until soft.
3. Add the Jerusalem artichokes and smoked garlic to the pot and sauté for a few minutes.
4. Pour in the vegetable broth and cook for about 20 minutes, or until the Jerusalem artichokes are tender.
5. Use an immersion blender to puree the soup until smooth.
6. Stir in the cream and mix well. Season with salt and pepper to taste.
7. Heat the soup again gently, but do not bring it to a boil.
8. Serve hot, garnished with fresh parsley.
